Whole Wheat Pizza Muffins

Recipe makes: 8 muffins (one muffin per serving)

Preparation time: 1.5 hours (dough) 15 minutes (muffins)

Cook time: 20 minutes

Equipment: (Dough)

Measuring jug, measuring cup, measuring spoon, plastic wrap or tea towel, 1 large bowl, 1 medium bowl.

Cutting board, knife, measuring cup, measuring spoon, muffin tin, small, metal spatula, cooling rack.

What you need to make this recipe: 

  •  1 ½ cup whole wheat flour
  • ½ cup warm water (approx. 100-110 Fahrenheit)
  • 1 tsp sugar
  • 1 tsp active dry yeast
  • ½ tsp salt
  • ½ tsp olive oil
  •  Pam spray (1-2 sec sprays)
  • 1 cup low fat pizza blend cheese, shredded
  • 1/2 cup low sodium marinara sauce
  • 1 medium bell pepper
  • 1 small onion (diced)

How to make Whole Wheat Pizza Dough 

Step 1: Measure warm water in measuring jug and then ensure it is at the appropriate temperature (water should be slightly warmer than body temperature).

Step 2: Add sugar and yeast. Allow yeast time to ‘feed’ on sugar and activate in the water (about 10 minutes).

Step 3: In separate large bowl combine flour, salt and olive oil.

Step 4: After yeast is ready, add to the bowl with flour mixture and mix with clean hands until dough starts to pull away from sides of the bowl.

Step 5: On a lightly floured surface knead dough for 5 minutes until the dough feels soft.

Step 6: Using pam spray, spray sides of a medium-size bowl and let dough rest for 30 minutes in a warm area covered with a tea towel or plastic wrap.

Step 7:  After dough has had time to rise, remove from bowl and place on clean surface again and portion into 8 balls (about 38g each).

Step 8: Place each ball in a sprayed muffin tin and then press the balls down to make a well so the dough touches the sides of the muffin tin.

Step 9: Cover the muffin tin with the towel and set aside in a warm area again for 1 hour.

How to make Whole Wheat Pizza Muffins:

Step 1: preheat oven to 375 Fahrenheit.

Step 2: Dice veggies and set aside.

Step 3: Add the marinara sauce first and then 2 tbsp of cheese to each pizza muffin dough.

Step 4: Add veggie toppings to the pizza muffin dough.

Step 5: Place muffin tin in the center of the oven on the middle rack.

Step 6: Bake pizza muffins for 20 minutes, the dough should be fully cooked, and the cheese should be melted and caramelized on top.

Step 7: Remove pizza muffins from tin using small metal spatula, place on wire cooling rack and allow to cool slightly before serving (5-10 minutes).
