Banana Oatmeal Pancakes

Recipe Makes: 8 pancakes (one pancake per serving)
Preparation time: 5 minutes
Cook time: 20 minutes
Equipment: Bowls, measuring cups, measuring spoons, blender, skillet and spatula.
What you need to make this recipe:
- 1/2 cup whole milk (any milk alternative can be used)
- 2 large eggs
- 1 egg white (33g)
- 1 medium banana
- 2 tablespoons of maple syrup
- 1 1/2 cups rolled oats (large flake oats)
- 1/2 cup oat bran
- 2 teaspoons baking powder 1/4 teaspoon salt
- 1 teaspoon of vanilla extract (optional)
- Cooking spray as needed
How to make Banana Oatmeal Pancakes
Step 1: In a blender, add the rolled oats, oat bran, eggs, egg white, banana, maple syrup, vanilla (optional), milk, baking powder and salt.
Step 2: Blend until the mixture is smooth. If the batter is thick add ¼ cup of milk or water as needed.
Step 3: Heat the skillet over medium heat. Once warmed, spray with non-stick cooking spray. Pour pancake batter into skillet in round circles.
Step 4: Cook for 2-3 minutes on one side. Turnover and cook for another 2-3 minutes.
Step 5: Drizzle with real maple syrup and toppings of choice.
