Pumpkin Oatmeal Breakfast Cups

Recipe makes: 12 breakfast cups (1 cup per serving)

Preparation time: 10 minutes

Cook time: 21 minutes

Equipment:

Bowls, spoons, spatula, knife, muffin liners, muffin tray

What you need to make this recipe:

  • 2 1/2 cup rolled oats
  • 1 1/4 cup pumpkin puree
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice, or additional cinnamon
  • 1/2 tsp salt
  • 2 1/2 tbsp pure maple syrup or honey
  • 1 tbsp oil
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

How to make Pumpkin Oatmeal Breakfast Cups

Step 1:  Preheat the oven to 380 F.

Step 2:  Line a muffin tin.

Step 3:  In a large bowl, stir together all dry ingredients. Add remaining ingredients.

Step 4:  Pour into the liners and bake 21 minutes on the center rack.

Step 5:  If you wish, you can then broil for up to two additional minutes, watching so they do not burn.

Step 6: Take out and let cool.

Oatmeal is high in soluble fibre which helps to lower cholesterol.

Storage:

The breakfast cups can be stored in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months.
