Current Teaching Areas:
Introductory Foods: Plant Origin (NUTR 1102)
Introductory Foods: Animal Origin (NUTR 1103)
Dietary Supplements and Herbal Remedies (NUTR 2205)
Food Processing (NUTR 3204)
Issues in Food Product Development (NUTR 4400/GAHN 6400)
Research Interests:
My research interests are primarily focused on the area of functional foods and food-derived bioactivities, and therefore combine several disciplines including food science, nutrition and physiology. I am particularly interested to find efficacious dietary approaches for prevention/reduction of pathological conditions associated with metabolic syndrome and other chronic diseases. My long-term goal is to investigate the nutraceutical potential of crops and commodities including pulses and dairy. Special focus will be made on pulse-based food formulation for children and adolescents. The ultimate goal of my research program and teaching is to provide better knowledge of health effects associated with the consumption of various foods and their ingredients, and thereby contribute to better collaboration between academia, agri-food sector and public health.
Students interested in conducting an Independent Study (GAHN 6658) or research project towards Honours (NUTR 4499) or Master (GAHN 6691) theses in the area of functional food and nutritional clinical trials are welcome to discuss these opportunities.
