Topics covered include: regulation of energy metabolism, effect of organ failure on intermediary metabolism, and abnormal metabolism due to inherited defects in absorption, transport and metabolism of selected nutrients. An overview of the food and nutrient recommendations for older and aging people living in a variety of community and continuing care settings. Topics will focus on the understanding and application of the determinants of healthy eating, resident centered care and nutrition care.

An introduction to the use of the Nutrition Care Process in the treatment of disease with nutrition. Topics covered will include nutritional assessment in the clinical setting, parenteral/enteral nutrition support, pharmacology; pathophysiology and treatment of metabolic stress, cancer and disorders of the gastrointestinal system and immune system. An Exploration of the latest research on the role of food and diet in diseases. The role of social determinants of health (e.g. racism, colonialism, gender, sexual orientation) in food and -diet-related issues will be examined. Topics vary but may include superfoods, fad diets, nutrigenomics, mental health, HIV, and others.

An examination of the principles underlying derivations and application of nutrient requirements, and the theoretical basis of nutritional assessment. An evidence-based approach will be used to explore the relationship between population level surveillance and nutrition policy.

Adult education and participatory leadership approaches will be used to explore the role of a nutritionist in a variety of community settings.

An examination of conceptual and theoretical frameworks, strategies, policies and ideological perspectives related to food security from sustainable food systems and social justice perspectives. Approaches to address individual, household and community food security, will be critiqued in relation to emerging food movements in Canada and globally.

A study of the design and conduct of clinical trials on foods and nutraceuticals.
